- 4 large egg whites
- 3/4 cup cooked white rice
- 1/2 cup water
- 1 tsp unsalted butter
Steps
- Melt the butter in a small non-stick pan over low heat.
- Add the egg whites and stir gently until just set, keeping them soft rather than browned.
- Chop the set egg whites into small pieces.
- Fold the rice and water through the egg so the bowl stays moist.
- Cool to room temperature before serving.
