Ingredients

- 1 lb lean ground chicken
- 1 large egg
- 1/2 cup finely chopped green beans
- 1/2 cup grated zucchini
- 1/4 cup finely chopped red bell pepper
- 2 tablespoons ground flaxseed
- 1/4 cup chopped blueberries
Steps
- Preheat the oven to 180°C (350°F) and line a small loaf tin (8 x 4 inch (20 x 10 cm) ) with parchment paper.
- In a large bowl, add the ground chicken, egg, chopped green beans, grated zucchini, chopped red pepper, ground flaxseed, and finely chopped blueberries.
- Mix tho roughly using a spoon or your hands until everything is evenly incorporated.
- Transfer to the loaf tin and press the mixture down firmly so it bakes evenly.
- Bake for 40-45 minutes, or until the meatloaf is fully cooked through and the top feels firm.
- Cool completely before slicing. Cooling helps the loaf firm up and makes it easier to cut into portions.
- Serve in appropriate portions and store the rest in the fridge or freezer.
Substitutions
- Use ground turkey instead of chicken
- Replace zucchini with grated yellow squash
- Swap flaxseed for chia seeds
