Ingredients

- 1 lb ground beef
- 2 tablespoons ground flaxseed
- 2 large eggs
- 1/2 cup coconut flour
- 1/2 cup cottage cheese
- 1 cup grated zucchini
- 1 tablespoon fresh parsley, chopped
Steps
- Preheat your oven to 350°F (175°C) and lightly grease a 1 lb loaf pan with coconut oil or line it with parchment paper.
- In a large mixing bowl, combine the ground beef, flaxseed, eggs, coconut flour, cottage cheese, parsley and grated zucchini. Mix well until all ingredients are evenly combined.
- Transfer the mixture to the prepared loaf pan. Press it down firmly and smooth out the top.
- Place the loaf pan in the preheated oven and bake for 40-50 minutes, or until the meatloaf is cooked through and reaches an internal temperature of 160°F (71°C).
- Remove the meatloaf from the oven and allow it to cool completely before slicing into portions.
- Slice into dog-appropriate portions and serve plain as a meal or snack.
Substitutions
- Use ground turkey instead of beef
- Replace cottage cheese with plain yogurt
- Swap coconut flour for almond flour
