Ingredients

- 400 g lean diced lamb
- ¾ cup brown or green lentils, rinsed
- 1 cup diced sweet potato
- ½ cup chopped carrots
- 4 cups water
- 1 tbsp olive oil
Steps
- Brown lamb in olive oil over medium heat.
- Add lentils, sweet potato, carrots, and water.
- Simmer covered 35-40 min until lentils are tender.
- Cool fully and skim any fat.
