  • 1 ripe banana, mashed
  • ¼ cup xylitol-free peanut butter
  • 1 egg
  • ½ cup unsweetened applesauce
  • 1 cup whole wheat flour
  • 1 tsp baking soda
  • Plain Greek yogurt, to top

Steps

  1. Preheat oven to 175°C (350°F). Line a mini muffin tin.
  2. Whisk wet ingredients. Fold in flour and baking soda.
  3. Spoon into cups and bake 18-22 min.
  4. Cool fully, then top with a small dollop of yogurt.
