Peanut Butter Pupcakes
These soft baked treats use applesauce and rice flour for a gluten-free texture. They are topped with a simple yogurt and peanut butter frosting.

Ingredients
- 1/2 cup applesauce
- 1/4 cup peanut butter
- 1 medium egg
- 1/2 cup rice flour
- 1/4 cup club soda/soda water
- 1/2 cup Greek yogurt
- 1 tablespoon peanut butter
Steps
- Preheat the oven to 180C/350F degrees and line a muffin tin with 6 cupcake liners.
- In a medium mixing bowl, add all of the pupcake ingredients and mix until combined. If the batter is too stiff, add more club soda.
- Spoon the batter mixture into the cupcake liners and bake for 18-20 minutes until the cupcakes are firm.
- Remove from the oven and allow to cool.
- In a small bowl, beat the yogurt and peanut butter until smooth. Pipe or smooth over the top of the pupcakes.
- Serve and await a wagging tail!
Substitutions
- Use oat flour instead of rice flour
- Replace applesauce with mashed sweet potato
