- 1/2 cup pumpkin puree
- 1 large egg
- 1/2 cup grated carrots
- 2 tablespoons apple sauce
- 1 tablespoon olive oil or coconut oil
- 1 cup oat flour
Steps
- Preheat the oven to 350°F (175°C) and line a muffin tin with 6 cupcake liners.
- In a medium bowl, combine the pumpkin puree, egg, grated carrot, apple sauce, and oil until smooth.
- Stir in the oat flour until just combined. Avoid overmixing.
- Spoon the batter evenly into the prepared muffin cups.
- Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
- Let the pupcakes cool completely in the tin, then transfer to a wire rack.
- Prepare frosting: Mix Greek yogurt and peanut butter in a small bowl until smooth.
- Once cooled, spread or pipe a small amount of the frosting on each pupcake.
- Offer to your dog as a special treat and store leftovers as needed.
