Ingredients
- 1 lb ground turkey
- 1/2 cup pumpkin puree
- 1 large egg, beaten
- 1/2 cup green beans, finely chopped
- 1/3 cup ground flaxseed
- 2 tablespoons parsley, finely chopped
Steps
- Preheat your oven to 350°F (175°C). Lightly grease a muffin tin or line with silicone muffin cups.
- In a large bowl, combine the ground turkey, pumpkin puree, egg, green beans, flaxseed, and parsley. Mix well until all the ingredients are evenly combined.
- Spoon the mixture into the muffin cups, filling each about three-quarters full and pressing down gently to compact the mixture.
- Place the muffin tin in the preheated oven and bake for 25-30 minutes, or until the muffins are firm and cooked through.
- Allow the muffins to cool completely before serving.
- Serve as a treat or part of a meal.
