- 400 g skinless cod fillets
- 3 cups zucchini, diced
- 1/2 cup water
- 1 tsp olive oil
Steps
- Steam the cod for 8 to 10 minutes, until it flakes apart.
- Run your fingers through the flakes and remove any bones.
- Simmer the zucchini in the water for 6 minutes, until soft.
- Fold the flaked cod through the zucchini, cool, then stir in the olive oil.
Substitutions
- Haddock or pollock in place of the cod.
